Eggplant


IN SEASON:  June, July, August
STORAGE: Store at a cool room temperature or in a plastic bag in the least cold part of your refrigerator- right in front.  Eggplant is ethylene sensitive so keep away from ethlylene producing items. In these conditions, eggplant should last 1 week.  Can be frozen for long-term preservation.
COOKING TIPS: Use stainless steel during cooking when possible, as other materials have a tendancy to cause the flesh of the eggplant to darken.
