Shell Peas


IN SEASON: May, June
STORAGE: Store unwashed in shell in a perforated plastic bag in refrigerator.  The sugar in peas turns to starch very quickly so eat within 2-3 days.  Peas are great frozen for long-term preservation.
COOKING TIPS: If cooked, cook quickly so not to destroy the vitamin C content.
