INGREDIENTS
- 1⁄2 cup balsamic vinegar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1⁄4 cup extra-virgin olive oil
- 1 bunch kale, stems removed and leaves chopped
- 1⁄4 cup red onion, diced
- 1 cup shredded carrot
- 2⁄3 cup fresh blueberries or strawberries
- 1⁄2 cup raw almonds
- 1⁄2 cup raw pepitas
- 2⁄3 cup of grape or cherry tomatoes
Instructions
- Place olive oil, vinegar, salt, and pepper in a small bowl. Whisk together.
- Place kale in large bowl. Pour dressing over it. Using your clean hands, massage the dressing into the leaves for 5 minutes.
- Place red onion, carrot, blueberries, almonds, pepitas, and tomatoes in with massaged kale.
- Using your hands or with a spoon, gently mix.
- Place in refrigerator to “marinate” for 10-15 minutes or longer for maximum flavor.
