Ingredients
Cherry-Pepper Mayo
- 1 cup mayo
- 2 tbsp. finely chopped, drained, stemmed cherry peppers
- 2 tbsp. finely chopped shallot or onion
- 2 tsp. finely chopped fresh rosemary
- Toast
- Red tomatoes
- Shallots
- Rosemary sprigs
- Flaky sea salt
Preparation
1. Cherry-Pepper Mayo: In a bowl, mix 1 cup mayo, 2 tbsp. finely chopped, drained, stemmed cherry peppers, 2 tbsp. finely chopped shallot or onion and 2 tsp. finely chopped fresh rosemary. (Makes about 1 1/4 cups)
2. Spread mayo onto toast. Assemble tomatoes, shallots or onions, rosemary and salt on toast.
